Brownies were the first recipe I ever learned how to make on my own as a kid. I’ve made some adjustments to my favorite recipe to work well for my husband and boys with their food allergies. It’s a simple recipe, but produces some delicious brownies! We don’t have them often, but these gluten free almond flour brownies are our favorite treat to make!
- ½ cup +2 tablespoons Coconut Oil
- 6 tablespoons Cacao Powder
- 1 cup Coconut sugar
- 2 eggs
- 1 tsp vanilla
- ⅔ cup Almond Flour
- ½ tsp baking powder (or use 2 parts Cream of Tartar to 1 part baking soda)
- ½ tsp salt
Preheat oven to 350.
Grease 9 inch pan. This is a perfect job for a kid to do. Put a bit of coconut oil in the dish and let them have fun brushing it around.
Sean loves this part.
Melt coconut oil in a saucepan on the stove with the cocoa powder.
Remove from heat. Once it’s cool, mix in the sugar.
Beat in the eggs.
Stir in the vanilla, almond flour, baking powder, and salt.
Another great time for a helper.
Pour into the dish.
Most important step: taste the leftover brownie batter. You know, just to make sure it came out alright…
Bake 25 – 30 minutes.
