Whether you’re on the autoimmune protocol, have to be gluten free, or dealing with sensitivities to food in general, it can sometimes be tough to get enough to eat. I’m always trying to come up with recipes that are:
- Simple to throw together
This is one of those recipes. When I’m chasing around three crazy boys (well, I’m only chasing two so far…but the third will be moving around in no time!), I have to make sitting down to eat a priority. Otherwise the hours go by, and I wonder why I’m so cranky. Since I’m also nursing a baby with food allergies, it’s a little more tricky to come up with food that he won’t react to. I try to pick food that is full of lots of good fats. Here’s one of my go-to lunches I can whip up in a few minutes, fills me up, and tastes delicious.
- Salmon – I’m really impressed with these cans of Bear and Wolf Salmon that I picked up at Costco. They have less of a fishy taste than other canned fish I’ve had. If you don’t have a Costco around, they are also available on Amazon.
- 1 avocado
- Couple slices of cucumber
- 1/2 of a radish
- Small piece of leek
- Nutritional Yeast – about 1 tablespoon – I just shake some on. I love this stuff! It gives things a nice cheesy flavor.
- Sprinkle of salt
- Sprinkle of basil
Slice up your avocado, cucumber, radish, and leek. Dump all your ingredients in a bowl.
Mix it all together and enjoy!
